Vegetarian black bean burritos with Halloumi

INGREDIENTS

235g-250g of halloumi cheese, diced into cubes

1 red onion diced

1 red pepper diced

2 tbsp of olive oil

Juice of ½ lime

1.5 tsp paprika

1.5 tsp cumin powder
-
2 tsp chili powder
-
½ tsp onion powder
-
½ tsp of salt
-
1 can of black beans, rinced (540ml/19oz)
-
1 cup of corn (use canned corn)

4 tortillas
-
Guacamole or sliced avocados*

Iceberg lettuce

Serve it with: salsa and/or sour cream
DIRECTIONS
- Preheat the oven to 425F.
- On a baking sheet with parchment paper, add halloumi, red onion and red pepper. Drizzle with olive oil and add the spices as well as lime juice. Toss well with your hands. Cook for 20 minutes, turning half way through.
- Add black beans and corn to the pan and toss well.
- Assemble in a tortilla and grill: spoon the mix in the center of each tortilla, add avocado/guacamole and lettuce, leaving room all the way around. Fold each tortilla in half, fold up each end, and roll the burrito away from you to completely close it.
- Grill each tortilla in a cast iron pan or panini grill. Serve it with salsa and/or LVO sour cream
