ABOUT THIS CUT
Lamb rib chops are cut from the “rack of lamb”, the top part of the back attached to the ribs and the have incredibly tender meat! One way that these chops are found is French trimmed, where all the meet nearest the end of the rib bone is removed, but LVO prefers a more South African presentation leaving some meat and fat on this part of the bone that makes you just want to pick it up and gnaw on it!
You’ll love the flavor of Verde Oveja’s happy, healthy, pasture-raised lamb. Our lamb has a classic flavor without ever tasting like mutton, as our lambs are processed before they are 1 year old. In addition to rich, lush pasture, our lambs are fed an all-natural, hand-crafted grain-based feed for additional nutrients and care. This is the highest quality lamb you will find in Ecuador.
This cut is packaged in two size choices: 1) two (2) rib chops per package at approximately 1.25 lbs and; 2) four (4) rib chops per package at approximately 2.5 lbs. BASIC COOKING TECHNIQUE
Grilled, Seared in a very hot pan or Broiled! These rib chops beg to not be overcooked or slow cooked! They are very tender and are best served medium rare!
